It’s actually not a particular cut of beef but a method of preparing a tough cut of beef (often round steak). “Swissing” means to tenderize a cut by pounding it or rolling it or cooking in a method that results in a tender texture.

If you are familiar with cubed steak, then you’ve seen a cut that has already been “swissed”. Cube steak has a distinct texture from a tenderizing machine that gives it the notable marks on top. Pounding, rolling or running through a tenderizing machine breaks up the connective tissues in meat which therefore results in a more tender texture.

How to Make Swiss Steak Casserole

Step By Step Instructions

  1. Cut round steak into individual portions; season both sides generously with salt, black pepper and garlic salt.
  2. Slice onions and arrange in bottom of the slow cooker; top with seasoned beef.
  3. Layer potatoes, carrots, and drained green beans; pour undrained diced tomatoes and tomato soup over the top.
  4. Cover and cook on low for 8 to 10 hours.

Storage Instructions

Let leftovers cool completely. Transfer to airtight container, and store in the fridge for up to a week.

  • salt, pepper and garlic salt
  • 1 onion, sliced
  • 4 potatoes, washed, peeled and quartered
  • 4 carrots, peeled and sliced
  • 14.5 ounces green beans, drained
  • 10.75 ounces tomato soup
  • 14.5 ounces diced tomatoes, do not drain
