Giant Marconi peppers are ripe for stuffing because they're so large! If you've grown some this year in your garden, or received some from a friend's garden and you're wondering what do do with them, stuffing and then grilling them is a great option.

Garden fresh!

A garden is such a beautiful thing! I love so many things about them. From watching a tiny seed grow into the freshest produce you'll ever get your hands on, to the sharing of the harvest among friends and family. I'm lucky to have friends and family who share their harvest with me. I have just enough room for a few herbs, one tomato plant and an attempt at a potted pumpkin plant. We'll see how that goes... lemme just say I'm real glad October is a ways off still.

What does a Giant Marconi pepper taste like?

One of the most fun things for me about gardening, as you can imagine, is figuring out what to do with the random varieties of veggies that come my way. Specifically the peppers. There are SO many kinds of peppers! In fact, I'd never even heard of Giant Marconi peppers until just this year.

After a bit of research and taste-testing I learned that they are typically peppers you stuff and they are deemed a sweet pepper. To me, they don't really taste sweet though, they do have a very mild flavor like an earthier bell pepper and they are a little bit bitter.

Goat cheese adds a punch of flavor

When I saw a few recipe ideas that incorporated goat cheese with Giant Marconis, I thought that would be a good match. The rich creaminess of goat cheese goes well with their mild and slightly bitter flavor.

So I got to stuffing and then fired up the grill. Since a few of my grape tomatoes had just ripened I threw some of those on the grill along with the peppers. They turned out to be a great little topper for the stuffed peppers.

This recipe is easy! Even if you're never stuffed peppers before.

This recipe is super simple and tasty is a great go-to if you have these giant guys growing in your garden this year and aren't sure what to do with them or are looking to try something different.

Some special tool can help make grilling vegetables easier.

I tried to be cheap and just use a ton of spray butter and put the veggies straight on the grill and you can imagine how well that worked.

Do yourself a favor, splurge on a grill pan. Your life will get a bit easier when you do, especially this time of year when there are so many fresh veggies available and grilling them is a wonderful way to give them flavor without adding calories.

Ingredients

  • 2 giant marconi peppers
  • 4 oz crumbled goat cheese
  • ¼ cup ricotta cheese
  • 2 tablespoon shredded Parmesan cheese
  • Italian spice mix
  • salt to taste
  • Spray butter
  • 8-12 grape tomatoes

Shop ingredients at Walmart.comAdd ingredients, then choose Pick Up or Delivery.

Instructions

  • Slice giant marconi peppers in half, from top to bottom so that each half forms what looks like a little boat. Remove and discard seeds.

  • Mix together ricotta and goat cheese. Stuff mixture into peppers halves. Sprinkle with Parmesan cheese, then spice mixture.

  • Place stuffed peppers and tomatoes onto a grill topper or a sheet of foil sprayed with butter to prevent sticking.

  • Grill at about 400˚ for 8-10 minutes or until cheese has melted and peppers have crispy edges. Serve pepeprs with the tomatoes on the side.

    These are incredible! Made the Italian seasoning and sprinkled minced garlic instead of mixing it in (kept extra in baggy). Left them on a bit longer to char a bit. Tasted like something at a gourmet restaurant! Great recipe!

    We love Marconi peppers. They are amazing in so many recipes and easy to grow. We stuff them, use in stews, cheese steak subs, with kielbasa and onions. Yum yum!!

    Marconi peppers are sweetest when you allow them to turn red on the vine. There is a definite difference in taste from the green and red. We love both flavors and pick some early and leave others to further ripen.

    Clean out the seeds and wash each pepper. Then freeze them for future use. Dice up some and slice some in strips. Store them in freezer bags. We like to double bag for extra protection.

    Such a great pepper that we enjoy year round!

      You'll want to remove the seeds. Giant Marconis are not hot peppers, their flavor is pretty mild, so the seeds really don't need to be saved. Thanks for asking!

    I don't see how many peppers are used in this recipe. Also when making can I put them in an air fryer and if so what temperature and how long to cook. \

      Hi Patsy, you want to use 2 giant marconi peppers, cut in half so you will have four stuffed halves total. I'd recommend grilling them for the best flavor.

      I have not tried to make these in the air fryer but found a recipe for jalapeno poppers made in the air fryer you could reference. I imagine the cook time would be similar. https://iwashyoudry.com/air-fryer-jalapeno-poppers-recipe/

      @Angela G., Funny I read the comments and I am amazed how many people do not read. I clearly read 2 peppers and discard the seeds. I digress. I am going to modify your recipe bu adding some ground hot Italian sausage. Add some heat to it and little depth of flavor. Let you know how we will love it. Thanks for posting this recipe.
